Curry leaves Rice is a flavored rice recipe prepared with fresh curry leaves paste, freshly grated coconut and tempered with Indian spices to enhance the taste of rice.

Curry leaves rice  is prepared  easily with available ingredients in your kitchen as it needs less time and ingredients.

You can enjoy curry leaves rice in your breakfast/ lunch meal and even pack in your lunch boxes.

Ingredients to prepare Curry Leaves Rice

  1. Curry leaves – 1 cup (medium size bunch)
  2. Groundnut Oil – 1 tbsp
  3. Mustard seeds – 1 tsp
  4. Cumin seeds – 1 tsp
  5. Chana dal – 1 tsp
  6. Curry leaves – 6 to 8
  7. Coriander leaves – 1 tbsp
  8. Green chillies – 5 to 6
  9. Cashew nuts – 1 tbsp
  10. Ghee/clarified butter – 1 tbsp

Video Recipe of Curry Leaves Rice

Step 1)

To  prepare  curry leaves rice firstly we need to prepare a paste of curry leaves by blending 1 cup of fresh curry leaves by adding 1/2 cup of water.

Step  2)

Take a pan pre heat for few seconds, pour 2 tsp of groundnut oil or coconut oil or as per your choice, add 1/4 tsp of  mustard seeds into the pan.

Step 3)

Then add 1/4 tsp of cumin seeds, 1/4 tsp of chana dal.

Step 4)

Add 1/4 tsp of urad dal, roast  until lentils become brownish in colour (If want you can add 1 tsp of peanuts along with lentils)

Step 5)

Add 5 to 6 slit green chilies into the tempered lentils mixture, sauté and cook for few seconds.

Step 6)

Now add blended curry leaves paste into the pan, mix well.

Step 7)

Add 1 tsp of turmeric powder and 1 tsp of rock salt, sauté and mix with the tempered curry leaves paste.

Step 8)

Add 1 tsp of curry leaves and 1 tsp of coriander leaves. mix.

Step 9)

Now add 1 large cup (250 gm’s) of pre cooked rice into the pan, mix rice gently with the tempered paste.

Step 10)

 Add freshly grated 1 cup of coconut into the rice, mix altogether.

Step 11)

Then add 1 tbsp. of roasted cashew nuts and 1 tbsp. of ghee/clarified butter into the prepared rice.

Step 11)

Switch off the stove, then slowly give a nice mix.

Step 12)

Transfer the prepared curry leaves rice into a serving bow, garnish with roasted cashew nuts and fresh coriander  leaves.

Step 13)

Serve with your favorite roasted masala papad/happala with fresh curds and veg salad.
