Palak paneer is Indian vegetarian dish consisting of paneer/cottage cheese in a thick gravy made from puréed spinach, spiced up with green chillies ginger and garam masala, flavoured with kasoori methi or dry fenugreek leaves, tomato puree onion puree and thick milk or cream are added to enhance the creamy taste of the Palak paneer recipe.

Palak means spinach and Paneer means cottage cheese, in India Palak paneer is mostly prepared to accomplish with Indian flat brads like Tandoori roti, roti, kulcha or with plain chapati.

Palak paneer is soft  and creamy in texture, tastes slightly sweet and creamy, healthier and delicious.

I usually prepare Palak paneer in cast iron kadai or non stick pan, this time i tried making palak paneer dish using my microwave oven  to less the time of cooking which turned out delicious and yummy.

Ingredients require to prepare Palak Paneer in Microwae Oven.

  1. Melted butter/ghee – 2 tbsp.
  2. Cumin seeds – 1 tsp
  3. Garlic pods – 4 to 5
  4. Ginger – 1/2″ piece
  5. Chopped green chillies – 2
  6. Coriander powder – 1 tsp
  7. Garam masala – 1 tsp
  8. Chopped onions – 2
  9. Kasoori methi/dry fenugreek leaves – 1/4 cup
  10. Roughly chopped tomatoes – 2
  11. Roughly chopped Palak/ Spinach – 1 bundle
  12. Red chilli powder – 1/2 tsp
  13. Salt – 1/4 tsp
  14. Sugar – 1 tsp (optional)
  15. Full cream milk – 1/2 cup
  16. Paneer/ Cottage cheese – 250 gm’s.

Step 1)

To prepare Palak paneer recipe in microwave, in a micro proof bowl  add 1 tsp of melted butter, 1 tsp of cumin seeds 4 to 5 garlic pods 1″ piece ginger and 2 chopped green chillies, 1 tsp coriander powder, 1 /2 tsp garam masala and 2 chopped onions,

Step 2)

Place the bowl in microwave oven, cook for 5 minutes, once cooked take out the bowl from oven, add 1/4 cup of kasoori methi/dry fenugreek leaves and 1 cup of roughly chopped tomatoes.

Now clean 1 bundle of fresh Palak/spinach clean with water, roughly chop Palak then add into the micro wave bowl, mix Palak with cooked spices an tomatoes, place the bowl in oven and cook for 5 minutes.

Step 4)

Take out the bowl after 5 minutes, let it cool for a minute, now transfer the cooked Palak into a beaker or blender, add 1 cup of water and blend until smooth and soft.

Step 5)

Now transfer the blend Palak/spinach puree into the same microwave bowl. add 1 tsp of chilli powder, 1 tsp of salt, 1 cup of fresh cream milk or thick milk and 1 cup of fresh paneer/cottage cheese cubes into the bowl, mix in gently.

Step 6)

Now place the bowl in the oven and cook for 5 minutes, take out the from oven, mix gently without breaking the paneer/cottage cheese, transfer into a serving bowl.

Step 7)

Serve Palak Paneer with Roti/Pulka/Naan or with your favorite flat bread.

Spinach leaves aids in weight loss and also are low in calories. Its high amounts of fibre content also help in good digestion.

The antioxidants that are found in spinach are lutein and zeaxanthin and these help in providing good eyesight.

This superfood contains neoxanthin and violaxanthin are two anti-inflammatory properties that regulate inflammation.
