Potato Fry Recipe ||Aloo Fry Recipe

Potato fry or Aloo fry recipe is simple yet tasty stir fried curry recipe which tastes crispy and spicy.

Potatoes are stir fried in oil and dressed with different types of dry spice powders to enhance the taste of potatoes.

I usually make stir fried  recipes with vegetables like ladyfingers, French beans, cluster beans, cocasia and with capsicums to munch along with sambar rice or rasam rice as a side dish, but when ever I prepare stir fried curry with potatoes I add different types of spices which are available in my kitchen pantry, to my surprise each and every time my recipe comes out good which tastes yum and crispy, this time I used kasurui methi/dry fenugreek leaves in my potato fry recipe it came out super delicious and crisp in texture, so decides to share this in my to do list and post in my blog to share with you all.

Ingredients required to prepare potato fry

  1. Potatoes – 250 gm’s
  2. Oil – 2 tbsp.
  3. Fennel seeds – 1 tsp
  4. Cumin seeds – 1 tsp.
  5. Turmeric powder – 1/2 tsp
  6. salt – 1 tsp
  7. Red chilli powder – 1 tsp
  8. Garam masala – 1 tsp
  9. Dry ginger powder – 1 tsp
  10. Dry mango powder – 1 tsp
  11. Kasuri methi/dry fenugreek leaves – 1 tbsp.
  12. Coriander powder – 1 tsp

Step by step preparation method of stir fried potato recipe

Step 1)

Heat one tablespoon of oil in a flat nonstick pan, add 1 tsp of fennel seeds, one tsp of cumin seeds, roast and splutter for few seconds till brown.

Step 2)

Clean, peel and dice  250 grams of potatoes as shown in the picture, then add them into the kadai, sauté for few seconds, close with a lid and cook for ten mins.

Step 3)

Now open the lid add 1/2 tsp of turmeric powder, 1 tsp of salt, 1 tsp of red chilli  powder and sauté for a few seconds in a medium flame.

Step 4)

Now add one tsp of garam masala, one tsp of dry ginger powder, saute and cook for a minute.

Step 6)

Add one tsp of mango powder/ amchur powder, mix all together.

Step 7)

Add 1 tbsp of kasuri methi/dry fenugreek seeds and 1 tsp of coriander powder into the stir fried potatoes.

Step 8)

Now stir fry potatoes for 5 to 10 mins until potatoes crisp.

Step 9)

Serve hot and crisp potatoes with sambar rice or ram rice as a side dish along with your favorite papad.

NOTE

  • Use peanut oil to enhance the taste.
  • you can deep fry potatoes instead of stir fry.
  • Do not burn potatoes while frying them.
  • you can garnish the dish with coriander leaves.
  • You can substitute kasuri methi with dry mint leaves.
  • You can add handful of curry leaves in tempering to make it healthier.
