A pickle preparation with Indian star gooseberry with step by step instructions which you can prepare and savour the flavour of spicy hot vitamin C loaded Indian Achar/pickle, the properties of gooseberry remains same in any form of consumption. In this recipe I had used star gooseberry you can substitute with normal gooseberry also.

There are different ways of pickle preparations in India each preparation has its own unique taste.

In south Indian a meal plate/menu is incomplete without serving pickle.

GOOSEBERRY PICKLE RECIPE

Ingredients

Indian star Gooseberry/avla/amla-150 gms

Brown sesame seeds-100 gms

Peanut Oil-100 ml

Mustard seeds-1 tsp

Cumin seeds-1 tsp

Ginger and garlic paste-1 tsp

Garlic pods -10-12

Coriander powder-1 tsp

Fenugreek/methi powder-1/2 tsp

Turmeric powder-1 tsp

Red chilli powder-2 tsp

Salt-as per requirement

Curry leaves

Lemon juice-5 tsp

Step by Step preparation process

 

Step 1

Take a flat pan heat 2 tsp of oil in a low flame.

(Always remember to heat the pan for few seconds before you heat the oil)

Step 2

 

Add fresh cleaned gooseberry into the pan and roast in low flame until they become soft and cooked from inside flip them frequently to avoid from burning Check with a toothpick to know amla roasted from inside

Step 3

 

Shift into a bowl and keep aside for a while to cool down.

Step 4

 

In a non-stick pan/kadai dry roast sesame seeds for 5 to 8 minutes until they become slight brown colour.

Step 5

 

Shift dry roasted sesame seeds into a dry and clean bowl keep it aside to cool down. Grind in a mixture jar to make soft powder. 

Step 6

 

Take a tempering kadai/pan heat peanut oil then add mustard seeds and cumin seeds let them crackle for a few seconds.

Step 7

Add chopped garlic pods sauté for a minute then add ginger garlic paste and curry leaves

Step 8

 

Add fenugreek powder/methi powder, coriander powder, chilli powder turmeric  powder and salt .

Step 9

 

Add powdered sesame seeds mix altogether for few seconds and switch off the flame.

Step 10

Add roasted avla/amla into the pan give a mix then add lemon juice.

Mix the prepared pickle,  transfer into a bowl. Store in a airtight glass jar.

Serve with rice/roti/paratha/dosa.

Note:

1)clean avla in water and wipe off with soft towel or tissue.

2)Use peanut oil to enhance the taste.

3)Do not burn avla/amla while roasting.

4)Use only brown sesame seeds.

 

5)Store in a air tight glass jar.

The main ingredient used in this recipe is gooseberry/amla.
