Sweet corn fritters


Sweet corn garelu

A Telugu seasonal dish which is prepared during the harvest season of corn. In some regions corn fritters are prepared as a special dish during festivals. This coin shaped deep fried fritters can be consumed as a evening snack accompanied with a cup of hot tea/coffee.  It can also be accompanied with sabudhana payasam/kheer which is a sweet preparation of sago in milk.


There is a saying in Telugu that “vinte bharatham vinali,thinte garelu thinali”. Which means if you want to listen any mythological stories then listen to Mahabharat and if you want to eat anything tasty then eat corn fritters.

« Sweet corn: 1 big cup (3 – 4 medium sized corns)

« Chopped onion: 1 big sized

« Garlics peeled: 10 to 12

« Coriander seeds: 1tsp

« Cumin seeds: 1tsp

« Green chillies: 6-8

« Rice flour: 1 cup

« Turmeric:1/2 tsp

« Salt as per your requirement

« Curry leaves: 1/2cup

« Coriander leaves: 1/2cup


« Oil: as per your requirement

Step by step cooking process:

1.  In a mixer jar add chillies, garlic ,onions, curry leaves and coriander leaves. Then add spices, cumin, coriander and turmeric.

2. Add a cup of sweet corns and  salt. Grind the mixture until it becomes a coarse batter

3.Take out the ground batter in a mixing bowl then add rice flour slowly

4.Check the consistency of batter and add rice flour as per requirement. Batter must be thick enough to make fritters.

5      5.Add curry leaves and coriander leaves. Mix well.

6.Take a deep frying kadai/pan pour sufficient oil for frying and heat

7.Take lemon sized batter with your fingers and make coin shaped flat fritters.

8.Deep fry fritters on both sides until they become golden brown in colour.

9.Serve hot.


§  Always use fresh corns.

§  Mix the batter well if the fritters tend to break.

§  Batter should be coarsely ground.

§  You can substitute sweet corns with regular corn. Add a teaspoon of jaggery to enhance the taste of regular corns.

§  If you are using regular corn instead of sweet corn then there is no need for adding rice flour.

Sweet corn is a variety of maize with a high sugar content. It is rich in vitamins B1, B5, B12, C, Folic acid, fibre and iron. Corn preserves healthy skin, helps during pregnancy, reduces blood sugar, cholesterol levels and delays aging process. Apart from these corn improves blood circulation in the scalp and strengthens hair strands.
