Vankaya Masala Kura /Brinjal Masala Curry is rich and flavourful gravy curry preparation which you can accomplish as a side dish with Biryani Rice or Jeera Fried Rice or with Plain Rice and Roti/Chepathi/phulka.

Vankaya masala curry is soft and smooth gravy curry which is spicy and rich in taste which can be easily prepared.

Brinjals are roasted and cooked in peanut oil and mixed with ground masala which is prepared by adding some spices, lentils, melon seeds and amchur powder to give creamy texture to the curry.

Brinjal/eggplant verities are perfect to add in any meal like soups stews gravy curries dry curries and in barbeques.

The texture of brinjal is soft fleshy and little bit bitter to taste.

These are available in different shapes and colours mostly in black purple and green.

Brinjals tastes good when cooked in peanut oil or coconut oil. I always remember when my mother used to cook brinjal curry using peanut oil.

The Aroma of curry makes me to swing in good mood.

I had experiment different recipes with brinjal/eggplant which came out really good and tasty. I will definitely share recipes which I prepared with brinjal which is my all-time favourer vegetable.

I still remember how me and my mother use to munch roasted brinjal as a side dish along with Rasam Rice or Sambar Rice which are roasted on fire.

My love for eating and experimenting new recipes with all varieties of brinjal is never ending.

Ingredients Required to Prepare Masala

  1. Oil – 2 Tsp
  2. Cumin seeds – 1 Tsp
  3. Coriander seeds – 1 Tsp
  4. Sesame seeds – 1 Tsp
  5. Pepper corns – 1 Tsp
  6. Chana dal – 1 Tbsp
  7. Urad dal – 1 Tbsp
  8. Melon seeds – 1 Tbsp
  9. Peanut powder – 3 Tbsp
  10. Amchur powder – 1 Tbsp
  11. Crystal salt – 1 Tsp
  12. Chilli powder – 1 Tsp
  13. Coriander leaves – small bunch
  14. Curry leaves – 15 to 20

Ingredients required to prepare Curry

  1. Brinjal – 250 Gm’s (purple coloured medium in size)
  2. Oil – 1 Tbsp
  3. Mustard seeds/Rai – 1 Tsp
  4. Cumin seeds/jeera – 1 Tsp
  5. Turmeric powder – 1 Tsp
  6. Dry coconut powder – 1 Tbsp
  7. Fresh coriander leaves – To garnish
  8. Pomegranate seeds – To garnish (optional)

Step by step masala preparation process

step -1

In a pan or kadai heat oil in a medium heat.  Add cumin seeds coriander seeds sesame seeds and cook until they start to splutter.

Now add pepper corns chana dal urad and melon seeds to the mixture and roast them in low flame until they become light brown in colour.

Next add dry roasted and powdered peanut then mix well and roast

Then add Amchur powder and sauté for few seconds.

Keep the mixture aside to cool down completely for 10 to 15 minutes.

Transfer the mixture into a mixer jar then add salt chili powder into the jar.

Now add curry leaves and coriander leaves into the jar.

Grind to a fine paste by adding required amount of water.

Take out the grind masala into a separate bowl and keep aside to prepare Brinjal masala curry.


Step by step Brinjal Masala Curry || Vankaya Masala Kura

Clean and cut brinjals without removing the stalks as shown in the picture.

In the same pan heat oil in a medium flame add mustard seeds and cumin seeds sauté and splutter to make tempering or tadka.

Then add handful of curry leaves into the pan and sauté them for few seconds

Now place brinjal one  after the other into the tempering mixture and sauté them for a minute.

Close the pan with a lid to cook completely until brinjal becomes soft and cooked.

Remove the lid and gently sauté brinjal then add turmeric powder and mix altogether.

Now add the ground masala paste into the tempered brinjal, mix gently with the tempered brinjal.

Then add dry coconut powder into the masala curry and mix well and cook for a minute until the oil in the gravy oozes out.

Transfer into a serving bowl, garnish with freshly chopped coriander leaves.

Serve hot with Biryani or Rice of your choice or Roti.


Cut the brinjals and soak them in water to avoid discolouring.

Use fresh and tender purple or black coloured medium sized brinjals.

Use peanut oil or coconut oil to enhance the taste.

You can substitute Amchur powder (dry mango powder) with tamarind pulp.

Raw peanuts can be used instead of peanut powder while preparing masala.

You can add onions and ginger garlic paste to the curry preparation.

Freshly grated coconut can be used instead of dry coconut powder.

      As I mentioned cook brinjal until it becomes soft.
      usually cooking time of brinjal depends on the quality of brinjal which we choose.
